Rosemary and Mustard Crusted Baked Ham Low Carb and Gluten Free


I don’t make ham very often. I’m not really sure why. I like ham, it’s just not something that pops into my head when I’m planning my weekly shopping list. Months or even years will go by without me feeling the urge – but when I do, I normally prefer a sweet glaze on it.

In fact my favorite recipe is from Nigella Bites cookbook and it’s the coca-cola ham. You simmer it in cola and onions for a few hours, then remove it and slather it with molasses, brown sugar, cloves and mustard powder and bake for an hour until crispy and sticky.  SO. GOOD. When I do make it, I always serve it with her sweet corn custard from the same book, which is also amazing.

Anyway, they were practically giving hams away at the grocery store the other day and I couldn’t pass one up.  Obviously my usual preferred methods weren’t going to work for a low carb version, so I had to come up with something different.  Being that the winters are mild here in SC, my rosemary bush is thriving so I picked a bunch of that and chopped it up.  I love mustard with ham, so in it went along with some mayo.  Then some minced garlic, and freshly ground pepper and my paste was made.

I slathered it on the smoky caramel colored skin and popped it into the oven at 300 degrees for 5 hours (for a 19lb ham).  It was really, really good!   Not necessarily a groundbreaking combination – but there’s something to be said for simplicity.  I just may have a new favorite way to eat ham, and I have a feeling it will be making it onto our table a lot more often from now on…

 

Ingredients :

  • 1 cup prepared mustard
  • 1/2 cup mayonnaise
  • 2 Tbsp garlic, minced
  • 2 Tbsp rosemary, chopped
  • freshly ground pepper
  • 1 smoked ham

Instructions :

  1. Combine all ingredients in a small bowl.
  2. Place your ham in a roasting pan fat side up. Slather generously with your mustard mixture. Pour about 1/2 cup of water into the bottom of the pan and place in a preheated 300 degree oven. Bake for about 15 minutes per lb. uncovered.
  3. Serve with your choice of low carb side dishes – roasted asparagus and some would go perfectly! Hope you like it!
