Black Pepper Bacon Jerky

Bacon can be its own meal when sprinkled with this savory and spicy dust before baking in the oven. It’s also the perfect snack when you’re on the go.


  • 1 tablespoon garlic powder
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon chili powder
  • 1 ½ teaspoons freshly ground black pepper
  • 1 pound uncured center-cut bacon


  1. Preheat the oven to its lowest setting, likely between 150°F and 175°F.
  2. In a large bowl, mix the garlic powder, cumin, paprika, chili powder, and pepper. Add the bacon strips to the bowl and coat them all over with the rub.
  3. Place a few baking sheets on the bottom rack of the oven to catch any fat that renders from the bacon as it bakes. Lay the bacon directly on the top rack of the oven.
  4. Bake for at least 2 hours; remove the bacon when it reaches your desired jerkiness.
